What are the differences and similarities between these rubbers? They both seem similar from the specs listed on the commercial sites that sell them.

actually they are very different.
mark v 30 is very soft. with glue its very loud and fast and without glue its very good control and feeling.
mark v xs is medium hard like usual Mark V, but the topsheet is more grippy so it has better spin. xs is good both without and with glue.
