I think that the T05 is a hard rubber, but where is the hardeness? on the sheet or on the sponge?

Both as a whole and individually.
 
Manufacturers derive different versions of a model line by hardness of either the sponge or the topsheet.
 
T05, 25, and 64 are said to share the same sponge differentiated by topsheets.

I think, more specifically, it's the pip structure that marks their difference.

example: tenergy 25. fattest pimples on a tenergy rubber. makes it the hardest rubber of the 3. 

another example, tenergy fx. supposedly softer sponge and softer topsheets (never tried them so correct me if i'm wrong.)

You are not wrong.  Also, when I hit a few times with T25FX -- big pimples and softer sponge -- it felt quite similar to regular T05 (smaller pimples, harder sponge).  I am sure I would have noticed some difference if I had hit with the T25FX longer.  But as a first approximation, it is like the two effects cancel out.
