The way I understand things (and I am subject to correction) the outer ply of a blade is most responsible for over-the-table touch play. What are the middle plies for?  What does the core do?

I think it was JRDallas who put together an exceedingly detailed analysis of the properties of plies and core.
 
The short of it, iirc, the top plies are responsible for most of a blade's feel, i.e., hard vs soft, and the core is responsible for the rigidity of the blade, i.e., stiff vs flexible.

So what about the middle plies. They can't be just for decoration...

the plies are a medium for the glue. how many 5 ply limba ayous blades with similar thicknesses can you name? and while some of them play similarly, you'd be surprised how much effect diff types and amounts will have...

Also, the different plies are placed so the grains are oriented differently.  Usually at right angles.  It reduces warping and makes the wood stronger.

It's not as easy as that. Any ply contributes to the blades properties. Blades always have to be looked at as an entity. For example a thin and flexible blade feels soft, even if its surface is quite hard.

If you want to look at the plies separately:

The outer plies are responsible for the touch. If the blades feels soft or hard. But they also contribute to the blades flexibility the most!!!

The second plies contribute to the blades over all thickness and to the sweet spot.

The center ply provides thickness. Thickness makes blades stiff.

thinner blades tend to have more catapult.

thicker blades tend to feel more solid and predictable.

thinner blades under 6mm are more for spinning easily(ma long anf boll play with under 6mm blades)
 and when you hit flat the ball flies with more arc, better to play away from the table
