i played agasint this white guy [HES A PENHOLDER!], and he serves bh right. its very heavy side, i try to attack it, but it flys off the table so much, i try using my bh to cut it on the side, again it flies out. keep in mind i am beginner, with all wood blade, 2.0mm all round rubbers.
i lost my racquet

He's probably giving you side top so chopping it will not work very well at all without you being a skilled chopper.  

First try just countering the side spin by keeping your blade neutral and sharply angled against the side spin.  Lightly block or push the serve back.  Don't put any chop or top angle - just the side canceling angle and watch how the ball reacts as you try to gently guide it back.  Be sure to put a big enough side spin canceling angle that the ball goes back in the direction it came from.

The ball may go into the net or pop up if he is mixing in chop or top spin but if you really cancel the side spin, you should be able to make small adjustments that make it land back on his side.    Once you start getting the ball back, he'll start mixing in top and chop.  Watch his motion carefully so that you can see which one is being mixed in and then add a small chop or top canceling angle to your existing side spin canceling angle.    Again, just guide the ball softly back over the net and don't hit into the ball as it comes at you so that the spin doesn't get a grip.  

Once you are getting the ball back regularly and can see when he is adding in top or chop and can feel how the spin is gripping your racket, you can hit the ball back using more power while still canceling the spin he is putting on it.  You'll need to use even greater canceling angles as you hit harder since the incoming spin will be getting a better grip.  Once you get used to it, you'll be able to easily return it and attack strongly if its long by looping and overpowering the original spin or by strongly counter spinning your return.

if it keep flying off the table then it's side+top spin. So just close your bat when hitting the ball. a simple way is to watch the spin carefully and block the ball back with good angle, you opp will have to deal with his own spin

Pure sidespin will also fly off the table if you chop it, not just side-top, but yeah side-topspin would fly higher.

Basically you can start by cancelling the spin by going against it, like JRSDallas was saying. You can also try to see the logo on the ball spinning, that will give away the type of spin and how heavy it is but you must look very carefully to see it.

I find that the simples way is to attack such a serve with a backhand flip when playing against right handed opponents (I am left handed), or if the serve has some backspin as well and I am too much of a chicken, I angle the blade inwards so that it is not perpendicular to the ball trajectory. Instead it is (depending on severity of sidespin) around 45 degrees against the direction of the spin from the ball trajectory.

push the side and top of the ball a little (the side of the direction it always flyes out) but mostly just push the side, the not so much.
