Whats the difference between an offensive player and a defensive one? what are the strokes that they usually use and also their killing stroke? What type of rubbers they use?

go watch a video of joo se hyuk or hou yinchao. those are defensive players. then go watch any of the top players [i.e. ma lon, chen qi] to see offensive. its better than words

Defense is more than just putting backspin on the ball. You'll notice that Ma Lin, Wang Hao, Wang Liqin et all can all play incredible defense and go on the offense with one stroke. A more extreme version of this was Samsonov in his peak years.

basically, offensive players tries to kill the opponent each ball by hitting fast, spinny, and powerful loops
defensive players play rallies, they try to outrally the opponent by usually chopping or blocking, using spin and/or speed |
