This sounds kinda dumb, but does anyone practice with a different blade / rubber setup from the one they use for matches?

Rationale is using a tad slower / more basic setup for practice, and use a faster / more "lethal" setup for matches.

So during a critical point in a match, you'd rather use a faster setup than a setup with more control ?

I think it's somewhat misguided: you develop touch, timing, and muscle memory with setup A, but want to use quite different setup B in matches, where it actually counts?  

Most of people I know would try to make practice before tournament as close to real thing as possible, including exact brand of balls used.

I think using some hurricane type rubber in the off session is a great way to train and develop and save money
, but  training with a different setup than your normal one from one day to the next maybe not the best idea

Yes, one training technique is to use a a slower setup for training in certain limited circumstances.
Example. some players will use a a slow blade with slow rubbers to practise their fast loop-drive game. The extra effort in getting the ball up to speed is a bit like weight training without the weights.
More extreme, is that you can try playing without rubbers at all. I think most European youngsters go through this at one time or other.

A better option would be to use one of those Kayaking paddles for practice, tennis balls instead of the plastic ball, and play on a table half immersed in water so you'll feel weightless playing on a regular court after.
