Best value for money - Yasaka Hasha Gold. Get one with weight ~100 g. Light 1-ply hinoki blades lack power.

What are the differences between a longer thinner handle and a shorter thicker handle?

Kiso Hinoki is very famous for single ply, so if it meets your budget, better buy either from Darker, Nittaku or Kokutaku. TSP Hanabi is also very good.
