Watching tennis players, it's very apparent (loud grunt) that they breathe out after the stroke. Do you guys breathe out during your stroke, or after?

I exhale during ball contact. I heard from martial artists that you're supposed to do that to get max force concentration onto that single point. But there's a difference between exhaling and moaning like Ovtcharov LOL

breath out on contact to ensure core muscles are tight .

inhale when doing backswings, exhale at the start of ball contact.

why do tennis players exhale after the shot? 

Yes in karate  we breathed during the punch

My breathing has no relation to hitting the ball. I take every breath I can. Sometimes I find I have stopped breathing during a point, but I see no way to time your breathing with your stroke outside of the serve. Just because you tennis players grunt I don't think that is necessary related to their breathing
